Ingredients

  • 450 g Lean beef mince
  • 1 small Brown onion
  • 1 medium Red pepper
  • 3 cloves Garlic
  • 25 g Tomato paste
  • about 60 ml WaterApproximate
  • 1 tsp Paprika
  • 1 tsp Cumin
  • 1 tsp Onion powder
  • 1 tsp Garlic powder
  • 1/2 tsp Cayenne pepper
  • 1 tsp Oregano
  • 1 tsp Salt
  • 1 tsp Black pepper

  • 8 x 20 g Mozzarella sticks
  • 80 g Low-fat grated mozzarella

Method

    Spray a large frying pan and soften the onion and red pepper. Add the garlic for 1 minute.

    Add the beef and cook until browned. Stir in paprika, cumin, onion powder, garlic powder, cayenne, oregano, salt and black pepper.

    Add the tomato paste and water; cook until the beef is evenly coated. Set aside.

    Cut the tortillas into halves and roll each half into a cone. Secure with a cocktail stick if needed. Spray and bake until lightly golden/crisp; the video does not state this first bake time.

    Fill each cone with one mozzarella stick and one-eighth of the beef mixture. Top with about 10 g grated mozzarella.

    Stand the cones in a loaf tin and bake at 180°C / 355°F for 10–12 minutes, until crisp and melted. Bake 3–5 minutes longer for more color if desired.
